Chicken Biryani Recipe – Step by Step Homemade Biryani Guide

To make a delicious chicken biryani, you will need the following ingredients:

For Chicken Marinade

  • 1 kg chicken pieces

  • 1 cup yogurt

  • 1 tablespoon ginger garlic paste

  • 1 teaspoon red chili powder

  • ½ teaspoon turmeric powder

  • 1 teaspoon salt

  • 1 teaspoon garam masala

For Rice

  • 500 grams basmati rice

  • 2 bay leaves

  • 4 green cardamoms

  • 2 cloves

  • 3 onions (thinly sliced)

  • 2 tomatoes (chopped)

  • 3 green chilies

  • 1 tablespoon ginger garlic paste

  • Fresh coriander leaves

  • Fresh mint leaves

  • ½ cup cooking oil


Step-by-Step Cooking Instructions

Step 1: Marinate the Chicken

In a large bowl, add chicken, yogurt, ginger garlic paste, red chili powder, turmeric powder, salt, and garam masala. Mix everything well and let it marinate for at least 30 minutes. This helps the chicken absorb all the flavors.

Step 2: Cook the Rice

Wash the basmati rice thoroughly and soak it for 20 minutes.
Boil water in a large pot and add bay leaves, cardamom, cloves, cinnamon, and salt. Cook the rice until it is about 70% done, then drain the water.

Step 3: Prepare the Masala

Heat oil in a large pan and fry the sliced onions until they become golden brown. Add ginger garlic paste and cook for a minute. Then add chopped tomatoes, green chilies, and spices. Cook until the oil starts separating from the masala.

Step 4: Add the Chicken

Add the marinated chicken into the pan and cook it for about 10–15 minutes until the chicken becomes tender and fully cooked.

Step 5: Layer the Biryani

Now add a layer of partially cooked rice over the chicken masala. Sprinkle chopped coriander leaves and mint leaves on top. You can also add fried onions for extra flavor.

Step 6: Dum Cooking

Cover the pot with a tight lid and cook the biryani on low heat for 15–20 minutes. This process allows the flavors to mix perfectly.
